Buddha jumps over the wall

One of the most popular dishes of Fujian cuisine is "Buddha jumps over the wall" (佛跳墙, Fotiaoqiang), a complex
soup making use of many ingredients, including shark fin, sea cucumber, abalone, and Shaoxing wine and requiring
one to two full days to create. The name of the dish reflects the appeal of the soup. It is said to be so enticing that
even a vegetarian monk (Buddha) himself could not restrain himself and would sneak out of the monastery (literally
"jump over the wall") to steal a taste.

Many people in Beijing believe that the best place to eat local cuisine is at a restaurant affiliated to the local government's
Beijing office (zhu jing ban). It is true in the case of Ba Min Shi Fu, which is affiliated to the Fujian Government's Beijing
office.

The restaurant serves probably Beijing's  cheapest Arhat Buddha jump over the wall soup, at 88 yuan per person. The
soup is so called because it is so tasty and fragrant that the legend said a monk living next doors jumped over to try it.
The soup features a mixture of abalone, shark fin, fish maw, pigeon egg and mushroom, simmered for more than six
hours in a caldron. The result is thick and tasty soup. Buddha jump over the wall soups made with better quality materials
cost more.

Another specialty is boiled sea clam in three-meat clear soup, which is simmered with chicken, pork loin and beef. The
restaurant's fish meat ball is particularly juicy. It is made with pork wrapping and pork filling. Also try Fujian style oyster
pancakes.

The restaurant provides a red rice wine that is a bit different from other places. It tastes even better when heated.

佛跳墙”即“满坛香”,又名“福寿全”,是福州的首席名菜。据说,唐朝的高僧玄荃,在往福建少林寺途中,传经路过
“闽都”福州,夜宿旅店,正好隔墙贵官家以“满坛香”宴奉宾客,高僧嗅之垂涎三尺,顿弃佛门多年修行,跳墙而入一
享“满坛香”。“佛跳墙”即因此而得名。
