Yotsuba is an authentic sushi heaven in Beijing, with seafood flown in daily from the Tsukiji market in Tokyo to
ensure the requisite freshness. For a full-on sushi experience, park yourself at the counter where the chef does
his stuff right in front of you. You can watch as he runs his knife through the fish of your choice. And then, almost
faster than the eye can follow, the bite-size squares of rice topped with fish are on a plate in front of you. We
particularly like the grilled eels that are prepared here, brushed with warm soy for a slightly sweet taste. Try them
with several glasses of warmed saké; you’ll keep wanting more. If you’re new to Beijing Yotsuba can easily be
missed, since it has an unobtrusive shopfront and none of the traditional indicators of a Japanese restaurant such
as red lanterns hanging outside. The restaurant is open for dinner only and has limited seating, ie, it’s really not
very big, so it’s one of the few Beijing restaurants where it really is best to make a reservation.
