Square,
Lost Heaven (Chinese: 花马天堂云南餐厅)
is Beijing’s first branch of the popular Shanghai-
based Yunnan restaurant with delicious food
inspired by ethnic minority cooking along the
legendary Ancient Tea Horse Trail (Chinese: 茶马古
道) that winds through mountainous Yunnan
province, Burma (aka Myanmar), Laos and Tibet.

With two successful branches in Shanghai, this new house of high-brow, swanky, tribal coolness endeavors to seduce you with a likable sophisticated
style.

The whole place glow – particularly at night - when the candles are lit and it is awash with vibrant colors. These are cast across the dark wood-decorated
dining room, which is peppered with ethnic minority face masks, decorations and furniture, as well as stunning photos of Yunnan. A second-floor terrace
overlooking its surroundings in the former American Legation completes a spectacular package. Beijing has no shortage of ethnic settings, but Lost
Heaven outshines them all.

Young chef Li Zhire, from a city near Kunming, capital of Yunnan Province, leads the kitchen, forging an abundance of provincial ingredients into new
combinations that will make you swoon.

Lost Heaven's menu is huge, leaving small tables with a quandary of choice, so go with a larger clan if you can. Start the evening with crisp Yunnan
wild vegetable cake
s (40RMB) flecked with willow leaves and wa coriander, the pungent leaf called culantro (not to be confused with cilantro) in Latin
cuisine. They lend a herbal undertone that complements a crisp, pocked surface speckled with local mountain pine grains that go better with a swipe of
tomato chutney and a cocktail.

Burma’s classic laphet thoke, a Shan ethnic tradition, crosses the border to Yunnan renamed as ‘
Burmese Tea Leaves Salad” (60RMB). It’s lively with
fresh-fried peas and favas that hold their bright color and nutty flavor, exploding in detonations of beany crunch between shreds of cabbage and
pickled tea leaves. It’s a refreshing dish to revisit throughout the meal.

Dali-style chicken with chili and green onions (68RMB) are tender skin-on thighs, pan-fried crisp and splayed beneath a green mountain of
scallion and herbs, although the chili is weak. The ‘tribe chicken with seven spices’ (68RMB) is a tender epiphany of silky shreds enveloped in flavor.

Pork ribs in black rose sauce (88RMB) are dark inky nuggets that dance between nearoverwhelmingly strong flavors and slow-cooked sweet
undertones, giving a floral reminder of the blossomy influence of this province’s cuisine.

Prices are very reasonable for the quality and Qianmen location, and it’s worth shelling for more luxurious menu items like the steamed cod with
Yunnan black truffle (¥360)
, one of the best renditions of this fish we’ve ever tried. The prawns with ji-zong mushrooms (¥190) are huge and
crunchy, topped with wonderful strips of fried goat cheese. But even the most humble dishes delight—we couldn’t stop eating the copper pot
dumplings (¥60).

The sizable menu warrants repeat visits, and on good days the outside terrace and concerned service are gracious bonuses. Suffer the traffic to get
to Qianmen 23 and get lost in a taste of heaven.

11月刚倒闭)之间,以前南非扒房(The Meat & Wine Co)的位置。人均消费在大院中最亲切,味型也讨喜,2012年五月底正式营业,现已不乏人气,适合

如果比同伴到得早,你大可先在门口处绣工精细的瑶族沙发上发呆到暮色降临,入夜后餐厅愈发神秘。暗红光照下,香茅草幽幽异香漫入鼻腔,一列列祭祀

花马天堂创始人是缅甸出生的云南人,“花马”取自丽江的古名“花马国”。说是云南餐厅,其实更像兼收并蓄的滇缅混搭——香茅草、小米辣、柠檬汁、缅芫
荽、花椒叶、韭菜花、苏子、酸角、椰汁、咖喱等香料的排列组合,被菜单首页描述为“交融大理、丽江、香格里拉、拉萨一线的白族、纳西族、藏族等高
原少数民族”的菜式。几乎每一道菜都有自己单独的蘸料,几乎每一样菜都配了公勺;没有中餐特有的圆桌转盘,如果聚餐人数超过6,长桌取菜就会不大方
便,解决方案除了一式两份外,就只能手工传送。

如果想品尝云腿、菌子等道地食材的本然风味,这里可能难以满足你。它们往往被切成丁打成糜作为点睛的辅料呈现。这里也找不到北京大多数云南餐厅会
供应的特色豆腐,如石屏豆腐、建水豆腐、包浆豆腐等。从这个角度理解,花马天堂巧妙地规避了用云南食材作为主料,同时绕开了那些可能需要适应的传

道铜盘锅贴(66元)基本就是猪肉韭菜馅儿的煎饺,咬开夹杂着类似柠檬草和青柠叶混合的异香,全全来自云南银香草。

这里的鸡肉类凉拌菜不少,如云南椒麻鸡和葱椒鸡,特派员最有印象的当属景颇鬼鸡(68元),肉质有嚼劲,皮薄脆,嚼口有脂香却无腻味。花腰傣味炒
牛柳(78元),牛肉切得细如线,用到了香菜香茅花椒叶等七种香料混香;干巴菌韭菜花炒肉(80元),干巴菌的存在感不强,但腌制韭菜花的特有酸辣
相当下饭。素食者可以点椰奶番茄酱烩佛手瓜(50元),爱吃泰式黄咖喱的应该会喜爱。

夜深,门口鸡尾酒吧开始高频运作,除了椰糖酸角汁(30元)、缅式奶茶(30元)、各种鲜榨果汁(40元/大杯)和饭后丰盛的什锦水果盘伴随一路,血
糖逐渐饱和,且跳过不够解瘾的中式甜品,直接点一杯花马天堂的招牌鸡尾酒“妖”聊到夜深。如果有状态,一定要去趟洗手间,注意别在洗手池边久待,
不然若看到一张陌生异性面孔,别怪我们没提醒你。
