One of the fine-dining warhorses of the Bund, Jean Georges is the
Shanghai project of celebrity Chef Jean Georges Vongerichten.
"Designed by celebrated architect Michael Graves, the restaurant’s
style is inspired by the grandeur of old Shanghai and the romantic
French influence of this international seaport. The bar and lounge
space revolves around a promenade from which both the stunning
vista of the Bund and the elegant dining space are in full view.
The dark and intimate dining room in the historic Three on the Bund
brings the right note of class to the experience, though the service
can occasionally be lacking. The contemporary French cuisine is
generally well executed, although very expensive. A single
Kumamoto oyster wreathed in Champagne jelly was followed by raw
tuna brightened by Thai chili paste. Then cubed raw kingfish with
Taiwanese mangoes and chili-lemon granita was utterly irresistible —
peppery, sweet and acidic, yellow and orange and red, all at once. A
second trio, equally satisfying, comprised crab dumplings with black
pepper oil and tiny local peas; seared sweet scallops from Dalian,
nestling with clams in a tomato jus; and superbly fresh snapper with
crunchy cucumber strips. Vaut le voyage, as Michelin would have it.
